Passion fruit mojito-1076You guys remember how much I love passion fruit, right?  When it comes to flavors, there are three that stop me in my tracks: passion fruit, pistachio and truffle.  Of those, passion fruit most definitely wins my heart.  The trouble, of course, is that passion fruits themselves are tiny little buggars.  And at $2 or more a pop, well, ouch.  Last year, after I discovered my passion fruit love, I discovered that Amazon sells passion fruit concentrate.  Fair warning: they are pricey.  But I sweet talked my handsome husband into letting me order some.  I may or may not have peppered my request with persuasive terms like: passion fruit cheesecake, passion fruit malasadas and passion fruit cocktails.  In any case, it worked.  Once those passion fruit canisters arrived, I didn’t waste any time; we thawed and incorporated it in a recipe stat.  This, my friends, is the result.

If you’re a fan of passion fruit, I highly recommend you order yourself a canister or three of concentrate.  I’m going to share several passion fruit recipes over the coming months and I wouldn’t want you to sit there drooling when instead you could be sipping {virtually} alongside me.

Ingredients

  • 3 oz passion fruit concentrate
  • 2 oz. lime juice
  • 1 oz. simple syrup
  • 10 mint leaves
  • 4 oz. light rum
  • Sparkling water (Pellegrino)

Instructions

  1. Combine everything but the rum and sparkling water in a large mason jar.
  2. Use either a muddler or immersion blender (we prefer the latter to infuse more minty flavor) to combine the ingredients.
  3. Split the passion fruit mixture into two high ball glasses and pour two ounces of rum into each glass, over ice. Stir with a swizzle stick.
  4. Fill to the top of your glass (about 2 oz) of sparkling water.

  1. Well I’m allergic to mint so I’m out on this one, but I’m sure it would make a good margarita. I clicked over and thought $25 wasn’t so bad…and then I saw the shipping. Perhaps you should plant a passion fruit tree?

    1. We, of course, have already experimented with the passion fruit margarita–you didn’t think we’d let *that* get overlooked, did you?! That recipe is coming soon ;) As for your mint allergy, you might try subbing in basil instead.

  2. I imagine the climate in Tucson would not be so great for a passionfruit vine, a bit dry perhaps? We grow them here in parts of Australia and I always had one growing up. I think I took it for granted a bit as we always had an abundance. I don’t have a vine at my current house and I too feel they are way too expensive at the shops. However we are a little bit luckier the pulp is readily available in the supermarket.Your recipe sounds great! I will have to try it.

  3. Beth, we should work out an exchange program…how about prickly pear (from cactus) for passion fruit??

  4. Have you ever tried to get anything through customs in Australia before? I don’t think I would get my prickly pear :( Does it taste nice?
