Almost s’mores cupcakes

Almost Smores2-1I’m a sucker for marshmallow anything.  Marshmallow malts, homemade marshmallows, chocolate covered marshmallows–I’m in.  And so when I found a recipe for marshmallow frosting, I had to try it for myself.  I decided to go s’mores themed, with the intent of baking a graham cracker cupcake, filled with chocolate creme and topped with the marshamallow frosting.  Only the graham cracker cupcake didn’t quite turn out the way I hoped.  Instead, I went with a vanilla bean cupcake.  I suppose that if you have your heart set on s’mores, you could sprinkle graham cracker crumbs on top of the frosting.  I didn’t have any on hand, so I just skipped it.  But if you (or someone you love) has an affinity for marshmallows like I do, you might want to try this recipe.

Almost s’mores cupcakes


For the vanilla bean cupcakes

  • 1 1/2 c + 3 T cake flour
  • 1 t baking powder
  • 1/2 t salt
  • 1/2 c unsalted butter, melted
  • 1 c sugar
  • 3 large eggs
  • caviar scraped from 2 vanilla beans
  • 3/4 c buttermilk

For the chocolate creme filling

  • 1 T cocoa powder
  • 2 T hot water
  • 3 oz bittersweet chocolate chips
  • 3/4 c heavy cream
  • 1/2 T sugar
  • pinch of salt

For the marshmallow frosting

  • 4 egg whites
  • 1 c sugar, pulsed (12 times) in a food processor until fine
  • pinch of salt
  • 1 t pure vanilla


    For the cupcakes:

    1. Line 14 muffin tins with paper liners and preheat oven to 350 degrees.
    2. In a medium bowl, whisk together the first three ingredients. Set aside.
    3. In the bowl of a stand mixer, combine melted butter and sugar. Beat for 30 seconds until thick. Add eggs one at a time, beating after each addition. Add vanilla caviar and beat just to combine.
    4. Add the dry ingredients in three additions, alternating with the buttermilk. Begin and end with the dry ingredients. Mix just until combined; do not overmix.
    5. Fill the cupcake liners 2/3 of the way full and bake for 18-20 minutes until a toothpick inserted comes out clean.
    6. Cool completely on a wire rack. Once cool, use a sharp knife to cut a cone-shaped hole in the top of each cupcake.

    For the filling

    1. Combine cocoa powder and water in small bowl. Stir with a fork until smooth. Set aside.
    2. Melt chocolate chips in a microwave safe bowl in thirty-second increments, stirring after each cycle. Be careful not to burn the chocolate - yuck! Cool for at least five minutes.
    3. Use a whisk attachment and beat together the heavy cream, sugar and salt on medium speed, just until the mixture thickens slightly, about 45 seconds. Increase speed to high and beat until soft peaks form.
    4. Beat cocoa powder mixture into melted chocolate until smooth.
    5. Using a whisk, fold 1/3 of whipped cream into chocolate mixture.
    6. Use a rubber spatula to carefully fold remaining whipped cream into chocolate until thoroughly combined.
    7. Spoon creme filling into piping bag and fill the hollowed out cupcakes with filling.

    For the marshmallow frosting

    1. Combine egg whites, sugar and salt in a double boiler (or glass bowl set atop a pot of simmering water). Whisk the mixture constantly until the sugar dissolves and the mixture is hot.
    2. Pour the mixture into the bowl of a stand mixture fitted with a whisk attachment and beat on high speed for three minutes. Add the vanilla while the mixture is beating.
    3. The frosting is done when it is white and fluffy. Use a piping bag to frost the cupcakes. Sprinkle with chocolate sprinkles and graham cracker crumbs, if desired.

    1. These sound amazing. My parents sent these marshmallow dipped in chocolate things to the boys for V-Day. Tommy didn’t finish all of his, and I gladly polished it off!

    2. Yum! Speaking of S’mores. I made my kids’ teachers S’mores Mix in a little jar for their Valentines. Ever since my kids have asked for it as their snack. I guess I set myself up for that one, although, they have only gotten it once despite the many requests. ;) Chocolate chips, teddy grahams and mini marshmallows!
