Blueberry Nectarine Cobbler

As far as fruits go, I’m a summer kind of gal myself.  Winter’s boring oranges and bitter grapefruits are no match for summer’s sweet bounty.  And really, straight from the fields, they’re perfect.  Yet we always find ways to plus them, don’t we?  We shortcake or buckle or creamify them.  My favorite, though?  When we cobbler them.

I found this recipe–I don’t remember where, allrecipes, maybe?–a couple of years ago.  Nary a summer month has passed since that I haven’t served this for dessert at least once.

Try it.  You’ll like love it.

Blueberry Nectarine Cobbler

Ingredients
1 c. flour
1/2 c. sugar
1 1/2 t. baking powder
1/2 c. milk
1/4 c. butter (softened)
1/4 c. brown sugar
1 T. cornstarch
1/2 c. cold water
3 c. peeled and sliced nectarines*
1 c. blueberries*
1 T. butter
1 T. lemon juice

*both of these fruits are on the dirty dozen list so I opt for organic

Directions
Preheat the oven to 350°.  In medium bowl, stir together flour sugar and baking powder.  Mix in milk and 1/4 c. butter until crumbly.  Set aside.

In medium saucepan, stir together brown sugar, cornstarch and water.  Mix in nectarines and blueberries.  Cook and stir over medium heat until thick and bubbly.  Mix in 1 T. butter and lemon juice.  Cook until butter melts.  Pour into an 8×8 pan (or 1 qt. casserole dish like I used).  Spoon batter evenly over fruit.  Sprinkle with sugar and nutmeg.  Bake for about 35 minutes or until fruit is bubbly and crust is nicely browned.

  2. My son was just commenting yesterday about how much he loves summer fruits and I do too! So much variety and so many ways to eat them! Cobblers are best (and easy).

  3. This looks divine! I can’t wait to give it a try. The only problem I foresee is trying to save 3 whole nectarines before my family gobbles them up. I agree — summer fruit produce is the best!
